  1. 100g packet glass or bean thread vermicelli noodles

  2. 2 tablespoons vegetable oil

  3. 2 garlic cloves, finely chopped

  4. 250g pork fillet, thinly sliced

  5. 2 cups (160g) beansprouts, trimmed

  6. 4 green onions (shallots), sliced on the diagonal

  7. 1 tablespoon fish sauce

  8. 1 teaspoon sugar

  9. cup coriander leaves

  1. Prepare noodles according to packet directions.

  2. Meanwhile, heat oil in a wok on high. Add garlic and stir-fry for 30 seconds, without browning, until fragrant. Add pork and stir-fry for 2-3 minutes, until browned.

  3. Add beansprouts, green onion, fish sauce and sugar and cook for 1 minute. Add drained noodles to wok and stir-fry for 3 minutes, until heated through. Scatter with coriander and serve.
