  1. 1/2cup raisins

  2. 1/3 cup of brandy

  3. 1 small onion, diced

  4. 1/2stick of butter

  5. 8 Granny Smith apples, peeled, cored and chopped

  6. pinch of lemon rind

  7. 1 tbsp. sugar.

  1. Soak the raisins in the brandy for a couple hours.

  2. Saute the onions in the butter until soft and translucent. Add the apples and stir. Cover and simmer for 12-15 minutes until tender. Add the lemon rind and remove from heat. Puree the apples in your food processor or blender and then add the raisins and brandy. Stir to incorporate. Taste and add the sugar if necessary. Serve warm. Can be made ahead and reheated
