  2. 1 New Mexico style barbecue sauce -- seenote

  1. Preparation : * Note: See the "New Mexico Style Barbecue Sauce" recipe which is included in this collection. Two hours before cooking, brush the salmon fillets on both sides with the sauce and refrigerate. Prepare a wood or charcoal fire and allow it to burn down to the embers. Grill the salmon for 2 to 3 minutes on each side, or until lightly browned. Brush again with barbecue sauce, and serve immediately.
