  1. 1/2 Lb. Orzo

  2. 2 Tbs. EVOO

  3. 1 Small to medium zucchini , diced

  4. 1/2 Purple onion , chopped

  5. 3 Cloves garlic , chopped or grated

  6. 1 (15 oz.) can chick pea s, drained

  7. 1/2 C. parsley leaves, chopped

  8. 1/4 C. mint leaves finely chopped

  9. 1/2 C. feta or goat cheese , crumbled

  10. Salt and freshly ground black pepper

  1. Bring a large pot of salted water to a boil. Add orzo and cook to al denté.

  2. Heat EVOO in a skillet, add zucchini, onions and garlic, season with salt and pepper and cook 6 - 7 minutes until tender, add chick peas and heat through. Toss with herbs, orzo and cheese. Adjust salt and pepper and serve.
