  7. 2 lg Egg whites

  8. 1/3 c Maple syrup

  9. 3 tb Fresh squeezed Orange Juice

  10. 1 c Skim milk

  11. 1 tb Vanilla extract

  12. 1 t Ground cinnamon

  13. 1/8 ts Ground allspice

  14. 1/8 ts Ground cloves

  15. 1/8 ts Ground nutmeg

  16. 1 tb Orange zest

  17. 1 1/2 c Rolled Oats --

  20. 1 t Baking powder

  21. 1/4 c Pecans -- chopped

  22. 1/4 c Cranberries -- dried

  23. Preheat the oven to 350 degrees.

  24. 12-well muffin tin

  25. 3 times with the vegetable

  26. oil.

  27. Put the egg whites in a large mixing bowl and whisk

  28. until frothy. Whisk in the maple syrup, orange juice,

  29. and milk. Add the vanilla, cinnamon, allspice,

  30. cloves, nutmeg, and orange zest. Whisk to blend.

  31. Stir in the oats, flour, and baking powder with a

  32. wooden spoon. Fold in the pecans and dried

  33. cranberries.

  34. Fill the muffin tin with the batter (each cup should

  35. be approximately two- thirds full). Bake for about 20

  36. minutes, until the muffins are firm in the center.
