  1. 1-1/2 cups all-purpose flour

  2. 1/2 cup cornmeal

  3. 3 teaspoons baking powder

  4. 1/4 teaspoon salt

  5. 1/4 teaspoon cayenne pepper

  6. 2-1/3 cups shredded cheddar cheese, divided

  7. 8 bacon strips, cooked and crumbled

  8. 1 egg

  9. 1 cup milk

  10. 1/4 cup butter, melted

  1. In a large bowl, combine the flour, cornmeal, baking powder, salt and cayenne. Stir in 2 cups cheese and bacon. In a small bowl, combine the egg, milk and butter. Stir into the dry ingredients just until combined. Fill greased muffin cups three-fourths full. Sprinkle with remaining cheese. Bake at 425° for 12-15 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers. Yield: 1 dozen.
