  1. 1/4 cup all purpose flour

  2. 1/4 tsp salt

  3. 1/4 tsp pepper

  4. 6 skinless, boneless chicken breast halves

  5. 1 Tablsp vegetable oil

  6. 2 cans (10 oz) tomatoes with green chiles

  7. 4 green onions, sliced

  8. 1 can (2 1/4 oz) sliced, ripe, olives, drained.

  9. 1 package (16oz) yellow rice, cooked according to pkg. directions. Optional: shredded cheddar cheese, sour cream, cilantro.

  1. Combine flour, salt and pepper: roll chicken in flour mixture. Brown chicken in oil in a large skillet over medium-high heat. Add tomatoes and next 2 ingredients: Heat to boiling. Reduce heat and simmer 20 minutes or until sauce has thickened. Serve chicken mixture over yellow rice. Top with cheddar cheese, sour cream and cilantro, if desired.
