  2. 1 minute. Beware, then potatoes are cut small like this, they will scald quickly. Drain well, and place them on an absorbent, clean dish towel or on paper towels. Gently press ALL the remaining water out of the potatoes. Be absolutely certain you have removed as much water as possible. Place potatoes onto cookie sheets, and flash freeze until just frozen. Remove cookie sheets from freezer, and cut potatoes into 3x4" squares. Package potatoes into zip baggies or foil, label and freeze.

  3. To serve, place the frozen hash browns in hot vegetable oil in a large skillet, then cook as usual.
