  1. 3 cups 187g / 6.6oz Unbleached flour

  2. 1 cup 198g / 7oz Sugar

  3. 1 tablespoon 15ml Baking powder

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 1 cup 237ml Skim milk

  6. 2/3 cup 157ml Applesauce or pureed pear

  7. 1/3 cup melted margarine

  8. 2 Egg whites

  9. 1 1/2 cups 355ml Blueberries Vegetable oil spray

  1. Recipe Instructions Preheat oven to 375 degrees. Blend dry ingredients and set aside. Combine milk, apple or pear, egg whites; blend well. Add to the dry ingredients and mix with a fork until just blended. Gently fold in blueberries. Spoon batter into muffin tins lightly sprayed with vegetable oil. Bake until golden brown. This recipe yields 12 muffins.
