  1. 2 tablespoons 30ml Butter or stick margarine

  2. 1/3 cup 48g / 1.7oz Finely chopped pecans

  3. 2/3 cup 106g / 3.7oz Packed brown sugar

  4. 2 tablespoons 30ml Cornstarch

  5. 1/4 teaspoon 1 1/3ml Salt

  6. 1 cup 237ml Fat-free sweetened condensed milk

  7. 1 tablespoon 15ml Light-colored corn syrup

  8. 2 tablespoons 30ml Egg yolks (large)

  9. 1/2 cup 46g / 1.6oz Flaked sweetened coconut - toasted

  10. 2 1/2 teaspoons 12ml Vanilla

  11. 1/8 teaspoon 0.6ml Coconut extract

  1. Recipe Instructions Melt butter in a medium saucepan over medium-high heat. Add chopped pecans, and saute until the pecans are browned (about 2 1/2 minutes). Remove mixture from heat, and stir in sugar, cornstarch and salt. Add milk, syrup and egg yolks and stir well. Cook 2 minutes over medium-high heat or until thick, stirring constantly. Remove from heat and stir in flaked coconut and extracts. Pour mixture into a bowl; cover and chill until slightly stiff ( about 15 minutes ).
