  1. 1 onion smallminced

  2. 1/2 cup mushroom caps thinly sliced

  3. 1 tablespoons minced celery leaves

  4. 2 tablespoons butter

  5. 2 tablespoons flour

  6. 2cups clear chicken broth

  7. 1 cup milk

  8. 1 cup cream

  9. 1 avocado mashed to a paste

  1. Simmer onion, mushrooms, and celery leaves in butter for 3 minutes or until onions are soft. Stir in flour and blend well. Add slowly, stirring until all blended, milk, cream and chicken broth. Bring mixture to a boiling point and stirring constantly let it simmer for 4 minutes. Before serving add avocado, blending well, bring to a boiling point again. Season with salt and pepper Yield: serves 4 Notes: I find I can vary the recipe quite nicely, by increasing the mushrooms and avocado by double, as i LOVE avocado's and mushroom's!
