  1. 3 ikan selar

  2. 1/2 cm turmeric, pounded

  3. Salt to taste

  4. Oil for frying

  5. 4 shallots, coarsely sliced

  6. 2 tomatoes, quartered

  7. 2 tsp dried shrimp paste, preferably granules

  8. 1 tbsp fish sauce

  9. 1/2 tbsp sugar

  10. 1/2 tbsp lime juice

  11. 4-5 cili padi/bird's eye, bruised

  1. Rub the fist with turmeric mixture. Set aside for 20 minutes.

  2. Heat oil, then fry the fish till crisp and done. Place in a serving dish.

  3. Remove all but 3 tbsp oil. Stir fry shallots and tomatoes for 2 to 3 minutes.

  4. Put in dried shrimp paste, fish sauce, sugar, lime juice and cili padi. Stir over medium heat till the oil floats.

  5. Pour sauce onto fish and serve.
