  3. 1 tablespoon butter

  4. 2 tablespoons of flour

  5. 2 cups milk

  6. Salt and pepper to taste

  1. Boil 1 young chicken in salted water until tender.

  2. When cold, remove the skin and cut the meat into small pieces.

  3. Melt 1 heaping tablespoon of butter in a saucepan, add 2 tablespoons of flour, and when well mixed together add 2 cups of rich milk and season with salt and a dash of pepper.

  4. Cook for about five minutes.

  5. Butter a pudding-dish, put a layer of the sauce in the bottom, then a layer of fine bread crumbs, then the chicken, then some sliced mushrooms.

  6. Repeat the process until the dish is filled.

  7. Cover the tops with half a cup of bread crumbs, moistened with butter, and bake for about 20 minutes in a hot oven.

  8. Send to the table in the dish it was cooked in.
