  1. Burgers:

  2. 2 lbs Ground Turkey , a mix of dark and white meat

  3. 6 Green Onions , chopped

  4. 3 Large Cloves Garlic , finely chopped

  5. 3 Tbsp Olive Oil

  6. 2 Eggs

  7. tsp Ground Black Pepper

  8. tsp Cumin

  9. 2 Tbsp Worcestershire Sauce

  10. 1/4 cup Barbecue Sauce

  11. 1/2 cup Panko

  12. 6 slices Pepper Jack Cheese

  13. 2 Large Anaheim Chiles; Grilled , skinned, seeded and cut into 6 pieces

  14. Vegetable Oil or Nonstick Spray , for grill

  15. Guacamole:

  16. 4 Ripe Avocados

  17. 5 Green Onions , chopped without tops

  18. 1/4 cup Finely Chopped Cilantro

  19. 2 clove Garlic , finely chopped

  20. 1/4 tsp Kosher or Sea Salt

  21. 1/4 tsp Ground Black Pepper

  22. tsp Cayenne Pepper

  23. Large Pinch Cumin

  24. 1 tsp Green Tabasco Sauce

  25. 1 Tbsp Lime Juice

  26. Sandwich:

  27. 6 Large Egg Buns With Sesame Seeds

  28. 2 Large Beefsteak Tomatos , sliced

  29. Dijon Mustard

  30. Kosher Pickle Spears

  1. Saute green onions and garlic, in olive oil, with a pinch of salt and pepper until soft, 4-5 minutes over medium heat. In a bowl, crumble turkey and add salt, pepper and cumin. In a separate bowl, beat eggs with Worcestershire and barbecue sauces, then add to turkey. Add onions and garlic with any remaining liquid in pan. This helps prevent the burgers from getting dry. Add panko and combine gently by hand, until all ingredients are thoroughly mixed. Separate into 6 patties and let rest. Grill whole peppers until skins are blackened. Immediately place in a glass bowl and cover tightly with plastic wrap. Set aside until skins are ready to peel off easily. Peel, core and seed. Meanwhile, scoop avocado out of skins. Mash avocados, leaving some of it chunky. Add onions, garlic, cilantro, salt, pepper, cayenne pepper, cumin and Tabasco sauce, then mix well. Add lime juice and blend thoroughly. Cover and set aside. Heat grill to high, brush with oil or spray with nonstick spray, and place on patties. Lower heat to medium high and cook 4-5 minutes. DonÂ’t move patties until they are ready to turn. Turn gently with a spatula and hands to make sure they donÂ’t fall apart. Cook an additional 4-5 minutes and check to make sure it's done. I usually cook an extra patty which I sacrifice to make sure itÂ’s cooked properly. Lower heat to medium low, then add cheese and allow to melt. Brush a small amount of olive oil, or mayonnaise, on each bun half and lightly toast. Place a scoop of guacamole on the bottom half of the bun and add a slice of tomato. Place burger on top. Place a slice of chili on top of burger. Spread mustard on top half and cover burger. Serve with pickle spears.
