    2. 900 gm asparagus; peeled and trimmed

    3. 2 hard-boiled eggs

    4. 4 tsp olive oil

    5. 3 tsp white wine vinegar

    6. Salt to taste

    7. A pinch of fresh grounded pepper (for taste)

    1. Steam the asparagus in salted water till tender. When tender, remove the asparagus and wash with cold water. Lightly squeeze asparagus till dry and chop them into halves. Blend egg whites and yolks separately. Mix the vinegar, salt, and pepper in a bowl. Add the asparagus to this and mix slowly. Finally add egg whites and yolks and toss well.

    2. Asparagus Tomato Salad Recipe Ingredients :

    3. 1/2 pound fresh asparagus; chopped and cooked 2 green onions; chopped 1/2 green pepper; chopped 1 tomato; coarsely chopped 2 tablespoons white balsamic vinegar 5 slices roasted red peppers; chopped 1/4 teaspoon pepper 1/4 cup olive oil 10 basil leaves; slivered 2 cloves garlic; minced 1/4 teaspoon dry mustard 1/2 teaspoon salt 10 chives, chopped lettuce leaves, Parmesan cheese slivers Take a bowl and mix the asparagus, tomato, onions, red and green pepper and keep aside. To prepare the sauce, take a bowl and mix vinegar, garlic, pepper and salt. Keep whisking, and add olive oil. Stir well and add the basil and chives. Use this sauce to moisten the vegetables. Set aside for 2 hours. While serving, arrange lettuce leaves on the plate, and sprinkle Parmesan cheese over the salad.

    4. Avocado and Asparagus Salad Recipe Ingredients :

    5. lb asparagus 2 medium avocados 2 tablespoons of olive oil 2 tbsp of fresh parsley Juice and zest of 1 lemon 1 tbsp of white wine vinegar 1/2 tbsp of balsamic vinegar 1 tablespoon of fresh coriander 1 tsp of fresh mint 1 tsp of Castor sugar Salt and pepper (to taste) Cut off the tough stem of the asparagus and steam the rest until tender. Let it cool, drain the water and set aside. Now take the avocados and peel off the flesh and toss with lemon zest and lemon juice. Add this mixture to the asparagus. For the salad dressing, take a bowl and whip the balsamic vinegar, white wine vinegar, Castor sugar, olive oil, mint and parsley together. Add salt and pepper to taste, and finally pour over the asparagus. Lightly toss and keep refrigerated before serving.

    6. Asparagus Rice Salad Recipe Ingredients :

    7. 1/2 cup asparagus; tough ends removed, chopped, blanched 1 ½ cups jasmine or Basmati rice, cooked 1/3 cup chopped green onions 2 tbsp chopped fresh thyme 2 garlic cloves; slightly crushed 4 tbsp balsamic or red wine vinegar 1 smoked pork chop 1 tsp salt Freshly ground black pepper To prepare the salad dressing, take a bowl and mix the vinegar, thyme, garlic, pepper and salt and keep aside for 1 to 2 hours, after which the garlic should be removed. Fry the pork chop till it turns light brown in color. Cut into little pieces and let it cool. In a large bowl, toss the asparagus, rice, pork chop and onions along with the salad dressing made earlier. For seasoning and taste add black pepper. Serve at room temperature.
