  1. 1/2 cup finely chopped onion

  2. 1/2 cup finely chopped celery

  3. 1/4 cup butter or margarine

  4. 3 cups cooked rice

  5. 3/4 cup chopped dried apricots

  6. 1/4 cup minced fresh parsley

  7. 1/2 teaspoon salt

  8. 1/4 teaspoon pepper

  9. 1/4 teaspoon dried thyme

  10. 1/4 teaspoon ground nutmeg

  11. 1/8 teaspoon ground cloves

  1. In a large skillet, saute onion and celery in butter until tender. Stir in the rice, apricots, parsley and seasonings. Transfer to a greased 1-qt. baking dish. Cover and bake at 350 degrees F for 30 minutes. Uncover; bake 5-10 minutes longer or until heated through. ');
