  1. 1/3 cucumber, cut in half lengthwise and sliced

  2. 1 tomato, cut in quarters and sliced

  3. 2 Tbsp fresh coriander, chopped

  4. 1 tsp ground cumin

  5. salt

  6. 1/2 cup/

  7. 130g/5oz soy yoghurt

  8. a pinch of paprika

  9. coriander leaves for garnishing

  10. Serves 4

  1. Method :

  2. Put the cucumber, tomato, coriander, ground cumin, salt and yoghurt in a bowl and mix well.

  3. Put the mixture in a serving bowl. Sprinkle with paprika and garnish with coriander.
