  1. 4 tablespoons 60ml Sambal (condiment)

  2. 2 tablespoons 30ml Minced garlic

  3. 2 tablespoons 30ml Minced ginger

  4. 1/2 cup 118ml Red wine

  5. 1/4 cup 36g / 1 1/3oz Chopped scallions

  6. 2 tablespoons 30ml Molasses

  7. 1/2 cup 118ml Canola oil

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  10. 8 Quail

  11. Chili Oil - seeNote

  12. Braised Green Papaya - seeNote

  1. * Note: See the "Chili Oil" and "Braised Green Papaya" recipes which are included in this collection.

  2. Mix all ingredients, marinate and refrigerate quail for at least 6 hours; overnight is ideal. Season the quail and grill until done; this will take about 20 minutes. Be careful not to burn the skin. Place on top of the Braised Green Papaya. Garnish with Chili Oil.

  3. This recipe yields 4 servings.
