  1. Columbian Fresh Banana Cake with Sea Foam Frosting

  2. 1 pkg yellow cake mix (not pudding mix)

  3. 1/8 teaspoon baking soda

  4. 2 eggs

  5. 3/4 cup Coca-Cola

  6. 1 cup mashed ripe bananas

  7. 2 teaspoons lemon juice

  8. 1/3 cup finely chopped nuts

  9. 2 egg whites

  10. 1 1/2 cup light brown sugar, packed

  11. 1/8 teaspoon cream of tartar

  12. 1/3 cup Coca-Cola

  13. 1 teaspoon vanilla extract

  14. dash salt

  15. In a large mixing bowl, combine the cake mix, baking soda and eggs.

  16. Measure the Coca-Cola, stir briskly until the foaming stops; add

  17. to the batter. Blend ingredients just until moistened, then beat

  18. at high speed of an electric mixerfor 3 minutes, scraping the bowl

  19. often. In a bowl, combine the mashed bananas with the lemon juice;add

  20. to the batter. Add the chopped nuts to the batter and beat for 1

  21. minute at medium speed. Turn the batter into a well greased, lightly

  22. 9" X

  24. 2" baking disk.

  25. 350F oven for about 40 minutes or until the

  26. cake tests done. Cool on a rack for 15 minutes, remove cake from

  27. pan and turn right side up on a rack to finish cooling.

  28. In the top of a double boiler, combine egg whites, brown sugar,

  29. cream of tartar, coca-cola, and salt. Beat for 1 minute at high

  30. speed with an electric mixer. Place over boiling water (the water

  31. should not touch the bottom of the top half of the double boiler).

  32. Beat on high speed for about 7 minutes until the frosting forms

  33. peaks when the mixer is raised. Remove from boiling water (for the

  34. smoothest frosting, empty into a large bowl). Add the vanilla

  35. extract and continue beating on high speed until thick enough to

  36. spread, about 2 minutes. Spread on the sides and top of the cold

  37. banana cake.
