  1. 12 clovers garlic , peeled & sliced

  2. 1 onion , chopped

  3. 3 tbsp. extra virgin olive oil

  4. 6 - 8 1 lb 10 oz. jars pasta sauce of your choice

  5. 1/2 c fresh basil , chopped

  6. 4 tbsp. fresh oregano , chopped

  7. 1 to 1 1/4c Marsala wine or red of your choice

  8. 1 yellow bell pepper , thinly sliced

  9. 1 lb baby Bella mushroom s, slices

  10. 1/4 c raw sugar kosher salt , cracked pepper & garlic granules to taste for variations add:

  11. 1 1/2 lb. meatballs

  12. 8 sticks Danny's homemade Italian sausage

  13. 10 chicken thighs, skinless

  1. in a large stock pot add oil & heat, add garlic & onion and stir & cook to golden brown, but not burned, add peppers & mushrooms, stir & cook to tender. add sauce,(pour small amount of wine into each jar & cap, shake to mix with remaining sauce) wine/sauce mixture & herbs, stir to combine. bring sauce to a gentle boil, reduce heat to low & simmer with lid on for 1 hour. add sugar, salt & pepper to taste. simmer for at least a total of 3 hours. serve over mushroom ravioli, angel hair pasta, stuffed shells, lasagna or pasta of your choice with marinara sauce. for variations: for a meat sauce crumble 1½ lb. ground round into sauce & cook. for meatballs mix 1½ lb. ground round with 2 eggs, ⅓ c Italian bread crumbs, Italian herbs, garlic granules. mix well with your hands, roll meat into 1½ " balls drop into slightly boiling sauce, spreading evenly in pan, gently submerge all balls, cover & simmer. for sausage cut sticks into 1" bite size pieces drop into gently boiling sauce, gently submerge all meat, cover & simmer. for chicken add skinless thighs to slightly boiling sauce, gently submerge all thighs, cover & simmer.
