  1. 3 -- whole Boneless 1 cup 237ml Chicken broth

  2. 3/4 cup 120g / 4 1/5oz Rice

  3. 2 Mangoes

  4. 3 Green onions - chopped

  5. 3 tablespoons 45ml French dressing Mango Dressing

  6. 1 Mango

  7. 1/2 cup 118ml Light cream

  8. 1/4 cup 59ml Thousand island dressing

  9. 1 tablespoon 15ml Mint - chopped

  10. 1 tablespoon 15ml Mango chutney

  1. Recipe Instructions Place chicken stock in pan, add chicken; cover and bring to a boil, reduce heat and simmer 10 minutes or until chicken is tender; drain and cool. Add rice gradually to a large pan of boiling water. Boil rapidly, uncovered, for 10 minutes or until rice is tender; drain and cool. Cut mango into thin strips. Cut chicken into slices. Make dressing by combining all ingredients in a blender. Combine rice, onions and French dressing in a bowl. Place on plates; top with chicken and mango dressing.
