  1. 1/2 cup(s) (or soy milk) rice milk

  2. 1 1/2 ounce(s) soft tofu

  3. 1 teaspoon(s) ground cinnamon

  4. 1 teaspoon(s) pure vanilla extract

  5. 1 teaspoon(s) canola oil

  6. 2 slice(s) whole wheat bread

  7. 1 teaspoon(s) light syrup

  1. Combine tofu, rice milk, cinnamon and vanilla extract in a blender. Purée until smooth; pour into a shallow bowl.

  2. Heat oil in a wide nonstick skillet over medium-high hea Dip bread slices into tofu mixture to coat on both sides, letting any excess drip off. Place in skillet and cook until golden brown on both sides, turning once.

  3. Transfer to a plate and top with syrup.
