  1. Green Tomato Jam

  2. 11 cups chopped green tomatoes

  3. hot water

  4. 8 cups sugar

  5. 2 lemons, thinly sliced

  6. Cover tomatoes with hot water and boil for 5 minutes. Drain, and add sugar. Let stand for 3 hours or longer. Drain syrup into a

  7. kettle; bring to boil and cook rapidly until it spins a thread.

  8. Add tomatoes and sliced lemons; cook for 10 minutes until thick

  9. and clear. Pack into hot sterilized jars, and seal. Makes 4 pints
