  1. 1 medium lemon

  2. 1 can(s) (13 3/4 ounces)

  3. artichoke hearts , drained

  4. 1/4 cup(s) light mayonnaise

  5. 1/4 cup(s) freshly grated parmesan cheese

  6. 2 tablespoon(s) olive oil

  1. From lemon, grate 1/2 teaspoon peel and squeeze 2 teaspoons juice.

  2. In food processor with knife blade attached, puree lemon peel and juice, artichoke hearts, Parmesan, and oil until smooth. Transfer to serving bowl. If not serving right away, cover and refrigerate up to3 days. Makes about 1 1⁄4 cups.
