  1. 1/4 pound butter

  2. 1 cup chopped green bell pepper

  3. 1 cup chopped onions

  4. 1 cup diced celery

  5. 1 cup diced shallots

  6. 2 cups chopped canned tomatoes

  7. 1 cup tomato pur?e or 2 tablespoons tomato paste

  8. 3 pounds peeled and de-veined shrimp

  9. 2 ounces cornstarch

  10. 1 pint cold water

  11. 1 ounce lemon juice

  12. Salt

  13. Pepper

  14. Cayenne

  15. 2 bay leaves

  16. 5 minutes. Add tomato pur?e or paste and bay leaves, then simmer

  17. 15 minutes.

  18. Add shrimp and simmer 15 minutes

  19. 1 pint cold water, add and simmer

  20. 5 minutes.

  21. Add lemon juice, salt and pepper to taste; add pinch of cayenne, simmer 15 minutes.

  22. Serve over steamed rice or creamed potatoes.
