  1. 3 Potatoes boiled - peeled (large)

  2. 4 Green chillies chopped

  3. 1 teaspoon 5ml Ginger grated

  4. 1 teaspoon 5ml Garlic grated

  5. 1/2 teaspoon 2 1/2ml Mintleaves finely chopped

  6. 2 teaspoons 10ml Coriander leaves finely chopped

  7. 8 Curry leaves chopped - (8 to 10)

  8. 2 Asafoetida - (2 to 3)

  9. 1/2 teaspoon 2 1/2ml Turmeric powder

  10. 2 teaspoons 10ml Lemon juice Salt to taste

  11. 1/2 teaspoon 2 1/2ml Cumin & mustard seeds

  12. 2 tablespoons 30ml Oil

  1. Recipe Instructions Chop potatoes into medium pieces. Heat oil in a heavy saucepan. Add seeds, asafoetida, allow to splutter. Add ginger, chillies, garlic, stirfry for 1 minute. Add mint leaves, curry leaves, stir. Add potatoes. Add salt, turmeric, lemon juice, stir well. Cook for 3-4 minutes or till oil separates. Add coriander, stir gently. Serve hot with puris, parathas or phulka. (refer rotis, naans, etc.) Making time: 15 minutes Makes: 4 servings Shelflife:Best fresh
