  1. 4 boneless skinless chicken breasts

  2. 1 tbsp canola oil

  3. 1/4 tsp salt

  4. 1 tbsp fresh ginger root, thinly sliced

  1. Cut chicken into narrow strips. Combine chicken with oil, salt, and ginger. Cover and chill at least 1 hour.

  2. In a medium skillet, remove ginger slices and cook chicken over medium high heat.

  3. Cook quickly, stirring often, until cooked through.

  4. This marinade gives the chicken a subtle ginger flavor. Additional oil is not needed for stir-frying.
