  1. 3 large boneless, skinless chicken breast halves, cooked and chopped

  2. 1/4 cup chopped onion

  3. 1/4 cup chopped green bell pepper

  4. 1/4 cup slivered almonds, lightly toasted

  5. 1/4 cup canned crushed pineapple, drained

  6. 1/4 cup sweet pickle relish, drained

  7. 1/4 cup chopped celery

  8. 1 cup mayonnaise

  9. 1/4 tsp. salt

  10. 1/4 tsp. pepper

  1. Combine the chopped chicken, onion, bell pepper, almonds, pineapple, relish and celery in a large bowl and toss to combine. Add the mayonnaise, salt and pepper and mix well. Cover and refrigerate at least 1 hour. Serve the chicken salad in sandwiches or on a bed of lettuce leaves.
