  1. 1 lb. Ground Beef

  2. 1 lb. Ground Pork

  3. 1 C. Bread Crumbs

  4. 1/2 C. Carrots shredded

  5. 1/2 C. Zuchinni shredded

  6. 1/2 C. Fresh Spinach chopped

  7. 1/4 C. Sundried Tomatoes packed in olive oil chopped

  8. 1 C. Tomato Sauce

  9. 1 TB. Old Bay Seasoning

  10. 2 TB Ground Flax Seed Salt and Pepper to Taste Topping:

  11. 1 C. Ketchup

  12. 1 TB. Worchestershire Sauce

  13. 3 TB. Brown Sugar

  1. Mix the first 10 ingredients in a bowl and then add the salt and pepper. Pat the meat mix into a large loaf pan lined with plastic wrap. Let it sit at room temperature for 30 minutes.

  2. Meanwhile heat the oven to 350 degrees and line the bottom of a 9x13 pan with parchment paper.

  3. Invert the loaf pan onto the parchment paper and remove the loaf pan and the plastic wrap from the meat leaving the meat in the shape of the loaf pan. Bake the meatloaf, uncovered, for 50 minutes. meanwhile mix the ketchup, worchestershire sauce and the brown sugar in a bowl.

  4. Remove the meatloaf and heat the oven to 425. Pour the topping over the top and sides of the meat loaf. Return to the oven and bake, uncovered for an another 20-30 minutes or until a meat thermometer reaches 180. Let it sit for 15 minutes before slicing. Yield: serves 8 Notes: Be sure to use fresh ground pork, not sausage
