  1. 2 tablespoons 30ml Lemon juice

  2. 1/4 cup 59ml Olive oil

  3. 1 1/2 teaspoons 7 1/2ml Dijon mustard

  4. 1/2 teaspoon 2 1/2ml Honey

  5. 1/4 teaspoon 1 1/3ml Salt

  6. 1/4 teaspoon 1 1/3ml Crushed red pepper

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  9. 1 lb 454g / 16oz Small button mushrooms - washed right

  10. Before you use them

  11. 12 Cherry tomatoes - halved

  12. 1 cup 110g / 3.9oz Grated carrots

  13. 2 tablespoons 30ml Chopped chives

  1. In a medium bowl, combine the lemon juice, olive oil, Dijon, honey, salt and crushed red pepper, salt and pepper. Add the mushrooms and toss to coat. Allow to marinate for 4 to 8 hours, stirring occasionally. When ready to serve, add the tomatoes, carrots and fresh chopped chives with the mushrooms. Adjust the seasonings and place in a serving dish.

  2. This recipe yields 6 servings.
