  1. 4 potatoes , baked

  2. 2 tbls. olive oil

  3. 1 tbls. parmesan cheese , grated

  4. 1/4 tsp. garlic powder

  5. salt and pepper to taste

  6. 4 slices bacon , cooked and crumbled

  7. 3/4 cup cheddar cheese , shredded

  8. 1/4 cup sour cream

  9. 2 tbls. chives or scallions , chopped

  1. Preheat oven to 450 Cut potatoes in half lengthwise Scoop out pulp, leaving a 1/4 in. shell Place baking rack on lined baking sheet In mixing bowl, combine oil, Parmesan cheese,garlic powder, salt and pepper Brush over both sides of skins Bake 6-8 minutes then turn over and bake for 6-8 minutes more.

  2. Sprinkle bacon and cheddar cheese inside skins Bake until cheese is melted Top with sour cream and onions
