  1. Rotel Tomato Chicken

  2. 1/4 cup olive oil

  3. 1 T lime juice

  4. 1/8 t crushed red pepper

  5. 4 chicken breast halves, skinned, boned and cut into 1 1/2" stips

  6. 1 clove minced garlic

  7. 1/2 lb fettuccine

  8. 2 T margarine

  9. 1 t grated lime rind

  10. 1 can RoTel tomatoes

  11. In gallon size zip lock bag, combine first 3 ingredients. Add chicken,

  12. seal, shake well and refrigerate for 15 minutes. Remove chicken and discard marinade. Spray skillet w/ vegetable oil spray (Pam etc.). Add

  13. chicken and garlic, cook until chicken is nearly done. Add Ro*Tel, heat

  14. to a boil. Reduce and simmer 10 minutes or until chicken is done.

  15. Cook fettuccine according to package directions; drain. Add margarine and lime rind; toss well and keep warm. Arrange fettuccine on palter, top

  16. with chicken and sauce. Sprinkle with parmesan cheese (Kraft Red Pepper

  17. parmesan does well).
