  3. 6 cups cooked skinless and boneless chicken or turkey, cut into chunks

  4. Salt and freshly ground white pepper

  5. 1 to 2 Tbs good olive oil

  6. 2 to 3 Tbs freshly squeezed lemon juice

  7. 1/2 cup chopped fresh parsley

  8. 1 tsp finely cut tarragon leaves, or 1/4 tsp dried tarragon

  9. 1 cup diced celery hearts

  10. 1/2 cup minced scallions

  11. 1 cup chopped walnuts, optional

  12. 3/4 cup or more of mayonnaise, preferably homemade

  13. 1 medium head of romaine, washed and dried

  14. 2 hard-boiled eggs, for garnish

  15. large handful of fresh parsley, for garnish

  16. several strips of red pimento, for garnish

  17. Toss the chicken or turkey in a big mixing bowl with the salt,

  18. pepper, and enough oil to cover the meat very lightly. Then toss

  19. with the lemon juice, and finally with the herbs, celery, onions,

  20. and optional walnuts. Taste, correct seasoning. Let sit 10 minutes,

  21. tossing several times.

  22. Drain any accumulated liquid out of the salad, correct seasoning

  23. again, and fold in just enough mayonnaise to bind the ingredients.
