  1. 4 'Beurre Bosc' pears

  2. 4 cups water

  3. 1 cup white wine, optional

  4. 1 vanilla bean, split

  5. For the sauce:

  6. 200g chocolate, melted

  7. 200ml cream, warmed

  8. 2 tablespoon sugar

  9. 40g butter

  1. Peel and halve pears and remove the core.

  2. Place in a large pot. Pour in water and wine and add the vanilla bean. Cover and gently bring to the boil. Remove from the heat and allow to cool.

  3. Place chocolate in a bowl over a pot of simmering water. Allow to melt.

  4. Gently warm the cream and sugar. Add chocolate to cream mixture and stir to combine. Beat in the butter.

  5. Serve the pears with the chocolate sauce.
