  1. 2 lbs. large shrimp peeled and deveined

  2. 3 red, green and/or yellow peppers, cut into 1" chunks

  3. 2 red onion, cut into wedges

  4. 2 cloves of garlic, minced

  5. 1/2 cup of lemon juice

  6. 2 Tbs. dijon mustard

  7. 1 Tbs. olive oil

  8. 1 Tbs. chopped fresh thyme, or 1 tsp dried

  9. 1/2 tsp each salt and pepper divided

  10. 15 minutes. Heat broiler. Thread shrimp and vegetables onto skewers; broil or grill

  11. 8 minutes, turning, or until shrimp are opaque.
