  1. 1/4 cup 59ml Pickling spices

  2. 1/4 cup 59ml Sea salt

  3. 2 tablespoons 30ml Mustard seeds

  4. 2 tablespoons 30ml Whole black peppercorns

  5. 2 tablespoons 30ml Hot red pepper flakes

  6. 1 tablespoon 15ml Celery seeds

  7. 1 tablespoon 15ml Minced dried chives

  8. 2 teaspoons 10ml Ground ginger

  9. 2 teaspoons 10ml Dried oregano

  10. 5 Bay leaves

  1. Add all of the ingredients to the bowl of a food processor fitted with the metal blade. Pulsing, process until the mixture forms a coarse powder.

  2. This recipe yields about 1 cup.

  3. For cooking shrimp, add 1/4 cup of the spices, along with 2 teaspoons salt, to a large saucepan of boiling water or half water and half beer. For lobster or crab, use 1 part distilled white wine to 3 parts water. Add the seafood and cook for 2 minutes, or until just cooked through. Remove the seafood and serve or chill.
