  1. 3 Beets; cooked and peeled

  2. 2 Tart apples; peeled & cored

  3. 1/2 c Feta or goat cheese

  4. 1/2 c Walnuts

  5. 1/3 c Thinly sliced scallions

  6. 1/3 c Basic vinaigrette dressing

  1. Cube the beets and the apples and mix together in a bowl wiht the cheese, the walnuts and the scallions.

  2. Drizzle dressing over and stir to coat.

  3. Serve on a bed of butterhead lettuce.
