  6. 2 medium tart apples, cored and diced

  7. 1 1/4 cups coarsely chopped celery

  8. 1 medium carrot, diced

  9. 3/4 cup chopped walnuts

  10. 3/4 cup raisins

  11. 6 boneless, skinless chicken breast halves, grilled or broiled

  12. Assorted fresh fruit for garnish

  2. Add rice, apples, celery, carrot, walnuts and raisins; mix well.

  3. Serve with grilled chicken breasts.
