  1. 1 Spanish onion - large

  2. 1 cup 62g / 2 1/5oz Flour - unsifted

  3. 1/2 teaspoon 2 1/2ml Salt

  4. 1/2 teaspoon 2 1/2ml Baking soda

  5. Egg

  6. 1 cup 237ml Buttermilk

  7. Peanut oil

  1. Cut onions into slices 1/4 inch thick. Separate slices into rings. Soak in ice water for at least two hours. Drain, then dry.

  2. Meanwhile, sift flour with salt and baking soda. Beat egg; add buttermilk add dry ingredients and beat until blended. Dip onion rings into batter and fry in deep hot peanut oil until golden brown. Drain on paper towels.
