  1. 2 Bay leaves

  2. 1 teaspoon 5ml Salt to taste

  3. 1 teaspoon 5ml Ground red pepper

  4. 1 teaspoon 5ml Black pepper

  5. 1/2 teaspoon 2 1/2ml White pepper

  6. 1/2 teaspoon 2 1/2ml Ground cumin

  7. 1/2 teaspoon 2 1/2ml Ground nutmeg

  8. Other Ingredients

  9. 4 tablespoons 60ml Margarine

  10. 3/4 cup 46g / 1.6oz Fine chopped onion

  11. 1/2 cup 55g / 1.9oz Fine chopped celery

  12. 1/2 cup 73g / 2.6oz Fine chopped green pepper

  13. 1/4 cup 15g / 1/2oz Fine chopped green onion

  14. 2 teaspoons 10ml Minced garlic

  15. 1 tablespoon 15ml Worcestershire sauce

  16. 1/2 cup 118ml Milk

  17. 1/2 cup 118ml Ketchup

  18. 2 lbs 908g / 32oz Ground turkey

  19. 2 Egg lightly beaten

  20. 1 cup 146g / 5.1oz Very fine dry bread crumbs

  1. Mix together the bay leaves or crush them, salt, red, black and white peppers, cumin and nutmeg and set aside. In a heavy skillet, melt the margarine and saute the onion, celery, green pepper, green onion and garlic, with the Worcestershire about 6 minutes. Stir in the seasoning mix, then the milk and ketchup, and cook 2 minutes. Remove from heat and cool.

  2. This would be a good time to remove the bay leaves if you left them whole. In an ungreased 13 x 9 inch pan, combine the liquid mixture with the ground turkey, eggs and bread crumbs, Shape into a loaf, which looks like a football, and bake, uncovered at 350F for 25 minutes, then at 400F for 35 minutes.
