    1. 3 pounds unsalted butter

    2. 8 pounds honey

    3. 2 pounds light brown sugar

    4. 1 1/2 teaspoons cinnamon

    5. 3/4 cup brandy

    6. 2 teaspoons lemon zest

    7. 1/3 cup orange zest

    1. Preparation : combine butter, honey, brown sugar, and cinnamon in a mixer bowl process at medium-low speed until well blended and fluffy add brandy, lemon zest, and orange zest-mix well spoon into a pastry bag, fitted with a large star tip pipe rosettes onto parchment or waxed paper chill until firm serve slightly chilled or at room temperature
