  1. 1 tablespoon olive oil

  2. 1 small zucchini, sliced

  3. 1/2 cup chopped green onion

  4. 2 cloves garlic, minced

  5. 2 medium tomatoes, seeded and chopped

  6. 1 tablespoon chopped fresh basil

  7. 1/4 teaspoon ground black pepper

  8. 2 large eggs

  9. 4 large egg whites

  10. 1 cup shredded mozzarella cheese

  1. Preheat oven to 350 °F (175°C).

  2. In an oven-safe skillet, heat olive oil and sauté zucchini, green onions and garlic. Cook for about 5 minutes.

  3. Add tomatoes, basil and pepper. Cover and cook another 3 minutes or until zucchini is tender.

  4. In a small bowl, beat together eggs and egg whites. Pour over vegetable mixture and sprinkle with cheese. Bake until eggs are set and a knife inserted in the center comes out clean, 10 to 15 minutes. Cut into wedges to serve.
