  1. 1/2 cup 118ml Oil

  2. 4 cups 250g / 8.8oz Onions - chopped (small)

  3. 4 Garlic cloves - chopped

  4. 2 teaspoons 10ml Black mustard seeds

  5. 12 Curry leaves - (to 15)

  6. 4 teaspoons 20ml Split unpeeled urad dal - soaked in water

  7. For 45 minutes

  8. 4 teaspoons 20ml Golden raisins

  9. 4 cups 640g / 22oz Cooked basmati rice

  10. 2 teaspoons 10ml Turmeric

  11. Salt - up to 2 tspns

  12. 2 teaspoons 10ml Sugar

  13. 1/4 cup 59ml Halved roasted cashews

  14. 1/4 cup 59ml Lemon juice

  15. 8 Green onions - finely chopped

  16. 1/2 cup 8g / 1/3oz Chopped cilantro - for garnish

  1. Heat oil over medium heat in large skillet or wok. Saute onions and garlic until soft, 2 minutes. Add mustard seeds, curry leaves, urad dal and raisins and saute 2 minutes.

  2. In a bowl, mix rice, turmeric, salt, sugar and cashews, saving a few cashews for garnish. Spoon rice into skillet with onion mixture and heat through, stirring, 2 to 3 minutes. Sprinkle with lemon juice. Garnish with reserved cashews, green onions and cilantro.

  3. This recipe yields 8 to 10 servings.
