  2. 1 whole cauliflower

  3. 3 tbsp oil

  4. 2-3 cloves

  5. 1-2 bayleaves

  6. 1 tsp turmeric

  7. 1 tsp red chilli powder

  8. 1 tsp garam masala

  9. 1 big onion

  10. 4 cloves garlic

  11. 1 inch ginger

  12. 1 large or 2 medium tomatoes

  13. 1 spice cardamom

  14. Salt to taste

  15. 1 tbsp chopped green coriander for garnishing


  17. Cut onion and garlic into thin slices and grate the ginger.

  18. Wash the cauliflower and make small slits in it from base as well as top but don't cut it.

  19. Heat oil in a deep pan (better if, non-stick). Coarsely crush the cardamom and cloves and add it to oil along with the bay leaves.

  20. When they turn brown, add sliced onions and garlic and fry them till golden brown and then add turmeric.

  21. Now add red chilli powder, garam masala, salt, grated ginger and tomatoes and fry them for a minute.

  22. Now place the cauliflower and gently spread the masala evenly over it wit h the help of a spatula and place a tightly covered lid over it and reduce the heat to low.

  23. 20-30 min approx

  24. Now serve it hot after garnishing with chopped coriander. Goes well with roti or paratha
