  2. 1 tart shell -- (9-inch) unbaked

  3. 4 eggs

  4. 1 Cup sugar

  5. 1/2 Cup heavy cream

  6. 1/2 Cup lemon juice

  7. 1 Teaspoon lemon zest

  1. Preheat oven to 400° F. Bake tart shell until set (10 minutes).

  2. Place eggs in a medium bowl. With a whisk or electric mixer,gentlystir to blend yolks and whites. Add sugar, cream, lemon juice andzest. Gently stir until well combined. (Mixture should not befrothyor have bubbles.)

  3. Carefully pour mixture into the hot tart shell. Reduce oventemperature to 250 degrees F. Bake for 30-40 minutes until fillingis just set. Do not overbake. Remove tart from oven and let itcoolcompletely. To serve, cut tart into wedges with a hot knife.

  4. Garnishwith candied orange peel or candied ginger if desired.
