  1. 1 c Quinoa

  2. 1 1/4c Water

  3. 1/3c Zucchini, finely diced

  4. 1/3c Carrots, finely diced

  5. 1/3c Radish, finely diced

  6. 3/4ts Garlic, minced Juice of

  7. 1/2 lemon Salt and pepper to taste

  1. + Directions : In a small saucepan, combine the quinoa and water. Bring to a boil over high heat, then reduce to a simmer, cover and cook for about 15 minutes or until the grain is tender. Remove the lid, fluff the quinoa, and let it stand until the grain dries slightly. Combine the cooked quinoa with the remaining ingredients. Toss and serve.
