  1. 1 Cup bite size pieces of left over meat (roast beef, turkey, chickn or pork) (can go vegitarian and do not add meat or use a solid firm tofu that has been pan fried)

  2. 1 Cup Yellow Corn meal

  3. 1 Cup Milk (2% or even fat free is OK)

  4. 2 Eggs (you can use egg substitutions as well, egg beaters etc)

  5. 1 Can Cream Corn - sometimes if I have some left over whole corn I will throw that in as well - clear the refirg

  6. 1 Can Black Olives - what ever size you want to use

  7. 1/2 Cup of Olive Oil - you can use whatever oil you have available. (I have cut this down from 1 Cup to 1/2 C you may even go a little less if desired to keep fat content low)

  8. 1 teaspoon Salt

  9. 1 teaspoon Onion Salt

  10. 1 teaspoon Garlic Salt

  1. Preheat oven to 375 degrees In a large bowl that is oven safe Add all ingredients together,ensuring that all of the meat is in bite sizes. Stir until well mixed. Place in oven and bake for 40 - 45 minutes stirring once after about 30 min. A side green salad and sour dough bread make great compliements to this meat. Note: My favorite is left over pot roast. You can always add more meat, 1 Cup is the least you should throw in. You can always mix them as well. If you have frozen a half a cup or so of cut up roast beef and now you have a little bit of left over turkey - combine them and enjoy. This recipe is very forgiving and allows for many modifications, such as the amount of oil or amount of meat, the use of egg substitutes and the use of what ever milk you have on hand. This is a use all that is left over recipe.
