  1. 1 lb 454g / 16oz Blackfish (tautog) fillet

  2. 4 Bacon

  3. 1/2 cup 31g / 1.1oz Chopped onion

  4. 1 cup 146g / 5.1oz Raw diced red potatoes

  5. 2 cups 474ml Water

  6. 1/4 cup 15g / 1/2oz Flour

  7. 1/2 cup 118ml Clam juice

  8. 1 Evaporated milk - (13 oz)

  9. 3 tablespoons 45ml Butter or margarine

  10. 1 teaspoon 5ml Salt

  11. 1/4 teaspoon 1 1/3ml Freshly-ground white pepper

  1. Rinse fish and pat dry. Cut into bite sized (1/2-inch pieces) and set aside.

  2. In a small skillet saute bacon until crisp. Remove bacon, blot excess fat with paper towels, crumble and set aside.

  3. Discard bacon drippings except for approximately 2 tablespoons. Add onions and saute in bacon fat until tender but not brown.

  4. Transfer onions to a deep saucepan and add potatoes and water. Cover and bring to a gentle boil. Reduce heat and simmer for 10 minutes. Add fish and simmer for about 10 more minutes or until fish and potatoes are done.

  5. In a small bowl combine flour and clam juice and stir with a fork until smooth. Add to fish and potato mixture stirring constantly to blend flour into cooking liquid. Stir in evaporated milk, butter and salt and pepper to taste. Continue heating over medium heat until chowder thickens.

  6. Garnish with crumbled bacon before serving.

  7. This recipe yields 6 servings.
