  1. Rhubarb Upside-Down Cake

  2. 3 cups sliced, fresh rhubarb,

  3. 1 1/2" slices

  4. 1 cup sugar

  5. 1/4 teaspoon ground nutmeg

  6. 1 1/2 cups flour

  7. 3/4 cup sugar

  8. 2 teaspoons baking powder

  9. 1/4 teaspoon salt

  10. 1/2 teaspoon ground nutmeg

  11. 1/4 cup butter or margarine, melted

  12. 2/3 cup milk

  13. 1 egg

  14. Sweetened whipped cream, optional

  15. Sprinkle rhubarb in a greased 10" heavy skillet. Combine sugar,

  16. flour and nutmeg; sprinkle over rhubarb. Drizzle with butter. For batter: Combine flour, sugar, baking powder, salt and nutmeg in a

  17. mixing bowl. Add butter, milk and egg; beat until smooth. Spread

  18. 350 degrees for 35 min. or until tests done. Loosen edges immediately and invert onto serving

  19. dish. Serve warm, topped with whipped cream, if desired.
