  1. Arroz con Pollo (Chicken and Rice)

  2. 1 lb. chicken breast; thinly sliced

  3. 3 cloves minced garlic

  4. 4 Tbs. olive oil

  5. 1 green pepper

  6. 1 yellow onion

  7. 2 cups stewed tomatoes

  8. 1 1/2 cups rice

  10. Extra sharp cheddar cheese; shredded, about 2 cups

  16. First, saute garlic and chicken in olive oil until fully cooked.

  17. Next, add green pepper and onion (cut in small chunks) to chicken.

  18. Saute until green pepper is brown around edges and onion is clear.

  19. Then, add rice, and stewed tomatoes.

  20. Put water in the skillet/pot; enough to cover your ingredients.

  21. Turn stove to "simmer" and cover for about 45 minutes. Make sure

  22. you check on it every 10-15 minutes to add water or stir. Make

  23. sure the "stuff" doesn't stick to the bottom and burn. If water

  24. is soaked up and rice is not completely cooked, add a bit more

  25. 10 minutes longer. When done, add cumin
